Coumarin is a compound found in many plants and can also be synthesized. Because of its special smell, many people like to use it as a food additive and perfume ingredient. Coumarin is considered potentially toxic to the liver and kidneys, and although it is very safe to eat natural foods containing this compound, its use in food is severely restricted.

The chemical name for coumarin is benzopyranone. Its special sweetness reminds many people of the smell of fresh grass. It has been used in perfumes since the late 19th century. Pure coumarin is crystal structure, slightly vanilla flavor. When taken into the body, coumarin can act as a blood thinner and has a therapeutic effect on some tumors. Coumarins also have some antifungal effects, but there are many safer substances that can replace these effects. Nevertheless, coumarins are sometimes used in combination with some other blood thinners for therapeutic purposes.

Coumarin is a natural source of one of the coumarins, also known as dunga beans, which grow mainly in tropical regions. The coumarin is obtained by soaking the beans in alcohol and fermenting them. Plants such as rhinoceros, strawberries, cherries, bison grass, clover and apricots also contain this compound. Coumarin has traditionally been used as a vanilla substitute in processed foods (especially tobacco), but many countries have restricted its use.

Some traditional foods are made from plants that contain coumarin, which is undoubtedly an important spice in these foods. In Poland and Germany, people are used to adding plants such as caryophylla to alcoholic beverages in order to produce a fresh, special, refreshing smell, which is mainly coumarin. This type of product is not dangerous to consumers, but you should avoid eating too much of this food.

In plants, coumarins can also act as natural insecticides to avoid plant disturbances. Many chemicals in the coumarin family are used to produce pesticides, and some are even used to kill larger rodent pests. Some consumer products may have some knowledge of certain coumarin family chemicals, such as the best known anticoagulant warfarin, which can be either injected or taken orally depending on the patient's needs.
